Cauliflower Pizza Crust
•2 cups riced cauliflower, cooked
•1/2 cup Parmesan cheese, grated
•1/2 cup mozzarella cheese, shredded
•2 cloves garlic, minced
•1 tbsp. fresh parsley, chopped
•1 pinch of salt
Preheat oven to 450 degrees F.
To rice cauliflower: place chunks of cauliflower in food processor and pulse until rice-like. Cauliflower can also be riced using a cheese grater and a little elbow grease!
Cook cauliflower in a skillet for approximately 5 minutes. No oil needed. You are not looking for any color on the cauli, simply a bit of mushiness.
Combine cooked cauliflower, egg, cheese, garlic, parsley and salt in mixing bowl and stir until incorporated.
Poor mixture onto greased baking sheet or pizza pan. Pat into desired shape, approximately 1/4 inch thick. Brush lightly with olive oil and bake for 15 minutes!
Remove dough from oven when golden brown, top with desired toppings, and return to oven until ready (just a few minutes).
