As always, many beautiful local and seasonal ingredients from the CSA this week (LocalRootsNYC.org)! These bitter dandelion greens were just perfect with a rich blue cheese, sweet mango, creamy avocado, crunchy walnut and a lime vinaigrette!
1 bunch dandelion greens
1 avocado, cubed
1 mango, cubed
1/4 cup walnut pieces
1/4 cup crumbled blue cheese
1 tablespoon lime juice
2 tablespoons extra virgin olive oil
1 teaspoon Dijon mustard
salt and pepper
Cut off thickest part of stem and tear or roughly chop dandelion greens.
In a large bowl, toss greens, avocado, mango, walnuts and blue cheese.
TO MAKE DRESSING: In a small bowl, whisk together lime juice, olive oil and mustard and season with salt and pepper.
Toss salad with desired amount of dressing.
