This sauce is perfect over soba noodles (warm or cold) or ramen noodles.
Shout out to my CSA - Local Roots NYC! Can't get enough of these spring onions and all of the local organic produce you folks deliver.
1 bunch spring onions, trimmed and sliced thinly
1 three inch chunk ginger, peeled and grated
1 clove garlic, minced
1/2 cup peanut oil
1 teaspoon tamari (or soy sauce)
1/2 teaspoon salt (or more, to taste)
In a medium sized bowl, combine spring onion, ginger and salt. Heat peanut oil in a small pan until it begins to smoke. Turn off heat and immediately toss in spring onion mixture (be careful of spattering oil). Stir in tamari. Let cool and serve immediately, or refrigerate and serve as needed.
