Buckwheat and Brown Rice Flour Pancakes (Vegan + Gluten Free!)

Ingredients

1/2 cup buckwheat flour
1/4 cup brown rice flour
1 cup almond milk
1 tablespoon coconut oil (melt if needed)
1 tablespoon chia seeds
1 teaspoon baking powder

Suggested Batter Flavorings/Add Ins:

Maple syrup
Vanilla extract
Cocoa powder
Stevia
Cinnamon
Nutmeg
Flavored hemp protein
Maca

Suggested Fillings:  

Fresh berries
Chocolate chips
 

Method

In a small bowl, mix chia seeds with two tablespoons water. In a large bowl, mix together buckwheat flour, brown rice flour and baking powder. Stir in almond milk and coconut oil. Stir in chia seed/water mixture. Stir in desired flavorings.

Lightly grease a large non-stick skillet with coconut oil over medium-high heat. Scoop 1/4 batter onto skillet (I scooped mine into a heart shaped cookie cutter). Sprinkle with desired fillings. Cook until many bubbles begin to appear, flip and cook an additional minute.
